"After a tour of a distillery in Scotland," says David Perkins, the owner of High West Distillery, "we went out to dinner and they brought us a dessert of honeydew drizzled with peated syrup. That was the most unusual, delicious and memorable ending to a dinner I've ever had."Inspired by the sweet and smoky flavor profile of his Scottish dessert, Perkins concocted a diabolical scheme to create the same balance of flavors at his distillery in Park City, Utah.
High West Campfire pays homage to that dessert. Their 'regular' bottling of Campfire Whiskey has plenty of accolades: 91 Points from Wine Enthusiast, The whiskey was also rated "...one of the top ten spirits you've never tried..." by Complex Magazine and was "Highly Recommended" by Serious Eats. Our private barrel was finished for 17 months in a barrel that previously held red wine (blend).
The nose is loaded with spice, cacao, caramel, stewed tree fruits and a hint of smoke. The palate starts big and is brought to balance by sweet notes of more spice, treacle and caramel. Hints of milk chocolate, mulled fruit, nuttiness and a touch of vanilla lead to a long-lasting finish where the sweet spices really shine. This is like a not-too-sweet, adult, liquid version of S'mores (but like, the kind they would serve you in Aspen, St. Moritz or Telluride).
And speaking of apres-ski places, this next little 4-pack would be perfect after a day on the mountain! Or at a warming hut on the slopes!
