High n’ Wicked is an independent whiskey bottler, and The Wild Rover was the second in its series of limited releases. It was made at Royal Oak Distillery in County Carlow, Ireland, using locally sourced malted barley. The whiskey was triple distilled in copper pot stills, matured in former bourbon casks, then finished in Pedro Ximénez sherry casks.
That sherry finish gives The Wild Rover its rich, dessert-like side, but there’s plenty of fruit and spice here too. The nose opens with caramelized apple and pear, followed by fig, toffee, pie crust and baking spice. Take a sip and you’ll find apple pie, brown butter, honeyed brioche and fig jam. It finishes long and smooth, with a pleasant nutty note.
It’s bottled at cask strength—58.7% ABV—with no chill filtration or additives. We’d try it neat first, then add a few drops of water to see how the aromas change. It’s a good bottle to pour after dinner and take your time with.
