Los Angeles Dodgers fans have yet another reason to cheer! We just received the latest release of Hakkaisan’s Junmai Daiginjo Sake Dodger’s Edition—the same sake served at Dodger Stadium. This is a dry, crisp, clean and elegant sake that will compliment sushi as well as almost any cuisine. The taste is mild and with a note of pear and Fuji apple. The finish is clean and mild.

Located in Japan’s Niigata Prefecture, over an hour northeast from Tokyo by bullet train, the Hakkaisan Brewery is nestled in the foothills of Mount Hakkai, a sacred mountain noted for its eight peaks. This region is - famous for its deep winter snowfalls which can reach over 10 feet, which is important, since this is Hakkaisan’s water source. Hakkaisan’s brewing water starts as pure snow and after being lightly filtered by the mountain soil, springs forth at the base of Hakkaisan Mountain. This soft, pure water from Hakkaisan’s dedicated stream is used in all aspects of production, and is central to the unique quality and taste of Hakkaisan sake.

The rice varieties used in making this sake are: Yamadanishiki, Miyamanishiki & Gohyakumangoku, which are milled down to 45% of the rice grain remaining, signifying this as “Daiginjo” level and a higher class of sake. Rice polishing is performed to remove any fats, proteins and minerals from the rice grain that can produce any unwanted flavors or aromas in the finished sake. The alcohol is 15.5%, and was bottled on May 29, 2025.
