The young and talented Guillaume Overnoy creates here a Côtes-du-Jura red made from an emblematic grape variety of the region: trousseau. To do this, he applied organic methods to care for his thirty-year-old vines. These benefit in particular from the influence of clay and red marl soils.
The winemaking is just as careful. It is clear that the winemaker has expertise inspired by that of his great-uncle Pierre Overnoy, the undisputed star of Pupillin. Thus, he carries out manual destemming of the berries which are then vinified without input in stainless steel vats. The wine is aged for more than a year - 14 months to be precise - in used wooden barrels. These two types of containers, both inert and used, allow the wine not to be marked with woody aromas or an overly robust texture. The wine is finally bottled without fining or filtration. Designed to be kept for around ten years, this vintage reveals itself through a ruby ??red color with purple reflections. From this escape delicious and fruity notes which, over time, evolve towards notes of undergrowth and humus. Dense and persistent, this wine will benefit from accompanying dishes of character such as game.
