The Glenmorangie Private Collection Sonnalta PX Pedro Ximenez Cask Finish Single Malt follows the well-used distillery technique of 10 years in bourbon and 2in sherry. In this instance, however, the sherry barrels used for the final aging are Pedro Ximenez barrels - the sweetest and richest of sherries. They are custom made Spanish oak barrels which are toasted on the inside. The result is a spirit with huge aromas of dried fruit, toasty oak, and roasted nuts; flavours of raisin and sherry and a finish that simply goes on forever.
