6 hectare plot of ninety+ year old Garganega vines planted in calcareous and tuffaceous (volcanic) soils
The fruit goes through a soft pressing and immediate cooling of the must
Spontaneous alcoholic fermentation - 80% in stainless steel and 20% in third passage oak barrels Vinification and fermentation are completely without added SO2
Maturation for 8 months on the lees in steel and partially in barrel, followed by 6 months in bottle before release.
