PRACTICING ORGANIC FARMING
Giacomo Borgogno is a historic winery in Barolo proper, and their winemaking is quite old-school: spontaneous fermentation, with an extended maceration of the skins for another 30 days by the traditional submerged cap method. Aging takes place for an incredible 4 years in large Slavonian casks. The vineyards for this are all in the Barolo district: Cannubi, Cannubi San Lorenzo, Fossati, Liste, and San Pietro delle Viole.
