François Chidaine is truly one of the Loire's greatest winemakers. Chidaine is based in Montlouis, but has wonderful holdings just across the Loire in Vouvray as well. Farming is organic with some biodynamic practices, but these taste more "classic" than "natural." Chidaine's style is very refined and broad, the wines possessing great depth with no hard edges or rusticity.
Les Bournais is one of the best terroirs in Montlouis. As François points out, the wines are all round and fresh: the Loire touch of Chidaine. The wines are aged in 600L barrels, slowly, and allow quite ripe nuances but compensated by flint clays. Do not hesitate to keep it for at least 3 years in the cellar so that the minerality can be expressed.
A more generous expression of Chenin, oriented towards yellow fruit. The palate combines volume and freshness.
