An "uncategorized" spirit from Empirical Spirits of Copenhagen, Denmark — founded in 2017 on the industrial island of Refshaleøen by Lars Williams and Mark Emil Hermansen, both alumni of the restaurant Noma, who brought the culinary world's experimental mindset to distillation. Made from a French wheat base with fresh cilantro, tomatillo, lime, vinegar, and fennel, vacuum-distilled at temperatures as low as 48°F (9°C) to preserve the delicate, fresh aromatics that heat would destroy — with a proprietary process allowing 50-100 cuts per distillation run, and the spirit often proofed down with house-made kombucha rather than plain water.
