Domaine de l’Enclos is a Chablis winery founded by brothers Romain and Damien Bouchard, who both learned the art of winemaking by working alongside their father. Today Domaine de L’Enclos is 29 hectares of organically farmed vines. The property is located in the heart of Chablis, in a large estate that was formerly the residence for the Monks of Pontigny Abbey.
Hand-harvested. Fermented on indigenous yeasts in older French oak barrels. Aged on fine lees in barrel for 12 months; then six months in tank. Lightly filtered, with only moderate sulfur added.
Aromas of lemon, crisp pear, herbal notes. Fresh and lively, classic Chablis energy.
