This is a special collaboration sake made by seven breweries (Katsuyama Sake Brewery, Suminoe Brewery, Niizawa Brewery, Yamawa Sake Brewery, Hagino Sake Brewery, Saura Co., Ltd., and Kawakei Shoten). Each brewery does a part of the sake making process. This time, the revered Niizawa Brewery, who make the sake polished down to 7% called, "Super 7." The nose is reticent, but becomes more fruit forward in the glass with time. Upon drinking this silky and elegant creation, one picks up notes of papaya, stonefruit and light tropical notes. This is a versatile sake that will be sure to please.
