Founded in 1980 by Giambattista Cilia, Cirino Strano, and Giusto Occhipinti. COS was the first winery in Sicily to adopt biodynamic practices, and inspired some of today's "natural" wine producers. They emphasise wines of purity and freshness, rely exclusively on indigenous yeasts and eschew any overt oak influence.

Hand harvested from vines averaging 15 years of age, COS’s Frappato, spends 9 months in neutral vats, followed by 3 months in bottle before release. As with most of COS’s wines, the emphasis here is on freshness and the bright expression of grape and terroir. Pale-hued and light-bodied, with a dusting of tannins and a bright acidity, you'll find surprisingly intense aromas of floral-tinged red fruits (strawberry, raspberry,...) supported by fresh herbs and tea leaf, and subtle spice. Italy's typical sapid minerality balances out the fruity ebullience in the end, the classic savory finish of a Mediterranean wine. Delicious with medium-textured fish and lighter Mediterranean fare. Serve at a refreshing 58F.
