The Fiano di Avellino from Colli di Lapio has been entirely fermented in stainless steel vats, and has an elegance and vibrant acidity that echoes a Premier Cru Chablis, especially with a few more years of bottle age. Simply put, this is an outstanding example of one of Italy’s most exciting native varieties. With an aromatic nose, you might find floral honey, lemon, anise and tarragon, plus a saline character. A steely beam of acidity pierces the concentrated, piquant flavors of citrus rind and minerals give this very impressive, yet somehow delicate, wine great intensity. Grilled pear salad with bacon, roquefort and port vinaigrette, grilled shrimp salad with lemongrass and chilled or poached salmon with lemon mayonnaise. It finishes very long and firm.
