100% Palomino
This is a modern take on the traditions of southern Spain, where local white table wines were allowed to develop a layer of yeast while mellowing in cask. Palomino is a variety that can take a lot of dry heat and still make a wine that tastes refreshing, with a subtle fruit character. This made it a popular grape at the hot and sunny southern edge of Spain. The brilliant Cota 45 winemakers gained a deep knowledge of the variety, and secured old (~90-year-old) vines in order to make this world-class wine of place! Light-bodied but deep in character, it comes with a soft, rich Macadamia-like aroma, matched by a subtle, lightly unctuous and rounded - fruit character (like yellow plum), and accent of sun-warmed hay, and an elegantly extended finish that's mouthwateringly saline. Delicious with light tapas and nut-encrusted fish dishes!
Grown in the classic white chalky soils of the Miraflores area of Sanlúcar de Barrameda. Fermented and aged in large neutral oak vats for 8 months, including around 4 months with flor, the yeast that covers an aging wine in the right conditions.
