This Oloroso Sherry is made from Palomino Fino grapes grown in Jerez’s inland vineyards, where warmer, drier conditions favor early oxidation and structural depth. Unlike biologically aged finos or amontillados, the base wine is fortified to approximately 18% ABV immediately after fermentation, preventing flor formation and allowing full exposure to oxygen from the outset. It then matures oxidatively within a traditional solera system for an average of twelve to fifteen years, developing a deep mahogany color and richly aromatic complexity.
