The must obtained after pressing the grapes begins to ferment but this fermentation is stopped by adding 96% wine alcohol at just the right moment to achieve the desired amount of final sweetness in the wine.
The resulting wine is aged in French oak barrels for more than 5 years using the Canteiro Method, which is used for the highest quality Madeira wines and involves aging the wine without any artificial heat source, as with the Estufagem process. The barrels are placed on wooden shelves called canteiros which are found in the highest points of the winery where it is warmer.
