Akabu's Sea Dragon Divine Water (Kairyu Jinsui) is their once-a-year release. This complex sake has depth, purity, and quiet power. This long-matured Junmai Daiginjo is refined and composed, opening with gentle fruit and soothing, subtle floral notes. The palate is supple and seamless, offering layered richness without weight. Ice-temperature maturation adds roundness and depth while preserving freshness and precision, leading to a long, clean, graceful finish. After pressing, the sake undergoes bottle pasteurization (hinkan hiire) and extended cold aging, allowing flavors to deepen slowly while maintaining elegance and transparency. Best enjoyed well-chilled, it pairs beautifully with delicate seafood and lightly seasoned, seasonal cuisine, enhancing natural flavors without overshadowing them. Produced in extremely limited quantities, Kairyu Jinsui is a contemplative, carefully aged expression within the Akabu portfolio. Once a year, Akabu releases this special sake 'Kairyu Jinsui.’ The Akabu Brewery has taken its finest Junmai Daiginjo sake, freshly pressed, and applied the process of “binkan hiire” (pasteurization in the bottle), followed by maturation in an ice.temperature environment where time quietly accumulates. Thanks to this ice-temperature aging, the sake can develop a deep, rich flavor and elegant aftertaste, all while maintaining a sense of clarity—without putting excessive stress on the quality of the sake. Until now, Akabu has focused on creating products that emphasize freshness and vibrant flavor. For the past few years, they’ve been striving to craft a new style of sake—one that combines a clean profile with deeper complexity. Through an optimal aging environment, they have succeeded in creating a mellow and full-bodied flavor.
