A traditional nocino from the Aggazzotti family of Colombaro, Formigine, in the province of Modena — farming the same "Ca'Bella" estate since 1714, over twelve generations, with more than 1,500 walnut trees devoted to nocino. Green walnut hulls are hand-picked around the Feast of Saint John (June 24), when the walnuts are soft, and macerated in neutral spirit in glass demijohns exposed to sunlight — developing the deep amber color naturally — before transfer to stainless steel with a light touch of cinnamon and cloves, never enough to overpower the walnut.
Palate: A tonic, digestive liqueur — bitter but pleasant and aromatic, with the distinctive, strong, unmistakable scent of walnut.
