SAKE

Sake or saké is a Japanese rice wine made by fermenting rice that has been polished to remove the bran. Unlike wine, in which alcohol is produced by fermenting sugar that is naturally present in grapes, sake is produced by a brewing process more like that of beer, where the starch is converted into sugars, before being converted to alcohol. The brewing process for sake differs from the process for beer in that, for beer, the conversion from starch to sugar and from sugar to alcohol occurs in two discrete steps. Like other rice wines, when sake is brewed, these conversions occur simultaneously. Furthermore, the alcohol content differs between sake, wine, and beer. Wine generally contains 9%–16% ABV, while most beer contains 3%–9%, and undiluted sake contains 18%–20% (although this is often lowered to about 15% by diluting with water prior to bottling).

    A particularly gentle style of Junmai that is an accurate expression of how delicate sake can become as you work your way to the north of Japan.     Akitabare Koshiki Junzukuri "Northern Skies"

    Akitabare is the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Pleasingly dry and quite mild, a well-crafted traditional sake.
    This Junmai has a plum nose with subtle grass tones. The first sip has a fairly dry start filled with hints of lemon, plum, and grape skin tones. The viscosity is slick and shimmering and the overall feel is soft and balanced. This Junmai is a classic "three sipper" which means you need to realize three sips to find the soul and beauty of this semi-dry Junmai.

    Daishichi makes rich, mellow sakes whose outstanding reputation comes from an insistence on a strictly orthodox brewing tradition: the Kimoto method. This means that when preparing the starter for the Sake, the fermentation vessel is left open, allowing natural (and more funky) yeast to ferment the Sake. It takes 4 weeks to nurture the yeast instead of the normal one week. This extra-long process creates a dry, earthy, complex brew with virtually no unwanted flavors what-so-ever.     Brewery: In the romantic snow country of Akita, Japan, just 5 minutes from Akita Seishu Brewery in Daisen, is the ancient ruins of Hotta No Saku, an active fort built for the Yamato Imperial Court in the Heian Era,792-1185AD. When it was excavated, 1000-year-old "Murasaki Mai" purple rice grains from faraway lands in southeast Asia were found. These grains were the origins of purple rice strains developed over a millennium to grow in northern regions. In 1996 the Ministry of Agriculture, Forestry and Fisheries along with the Association for the Revitalization of ancient rice petitioned Akita Seishu brewery to craft sake made with this ancient heirloom purple rice strains. Honored and inspired, Mr. Ito challenged his master sake brewers to capture the magnificent cherry-blossom-blush of color of this ancient rice. So Sakura Emaki came to be. Sakura means cherry blossom and refers to the beautiful flower, so emblematic of Japan, while Emaki refers to the illustrated scrolls on which the first ever novel The Tales of Genji were written and preserved.
