100% Pinot Noir from old vines farmed biodynamically and planted on sandy soils over a granite bedrock, halfway up the Schlossberg hillside. The grapes are harvested by hand picked at maturity, then vinified with respect: one week of cold maceration, 10 days of fermentation with indigenous yeasts, 12 months of ageing in barrels, with 15% new oak.
An elegant nose with notes of red and black fruits: raspberry, amarena cherry, plum, and hints of sweet spices. The palate is juicy, fluid, and smooth, with a lovely acidity, typical of the grape variety and the terroir. A confidential cuvée!
