CERTIFIED ORGANIC
The winery is based in the small town of Matheny and covers approximately 6 ha in the Arbois and Côtes du Jura AOCs with the vines planted in limestone and marl soils. Saint Pierre achieved organic certification in 2012, having started conversion in 2002. All wines are fermented with native yeasts either in tank or neutral barrel. Vinification for the reds is done without the addition of sulfur, and the whites are vinified in both the traditional sous voile method, as well as topped-up, or ouillé style. These are clean, balanced expressions of their terroir, and drink almost too easily. Produced by letting the fruit press gently, using only gravity, Farbice's Chateau Renard 2020 Chardonnay is incredibly elegant. Notes of bright, zippy citrus, ripe melon and stone fruit are complimented by a light, nutty aroma that ties everything together perfectly.
