The United States is a significant producer of sparkling wine with producers in numerous states. The classic example of a sparkling wine is Champagne which is exclusively produced in the Champagne region of France. Sparkling wine has significant levels of carbon dioxide in it, making it fizzy. The carbon dioxide may result from natural fermentation, either in a bottle (as with the traditional method), in a large tank designed to withstand the pressures involved, or as a result of carbon dioxide injection. Sparkling wine is usually white or rosé but there are many examples of red sparkling wines such as Italian Brachetto. The sweetness of sparkling wine can range from very dry "brut" to sweeter "extra dry". Most countries reserve the word Champagne for a specific type from the Champagne region of France.

The Pinot Noir dominated blend provides impressive red-fruited dimension to the ripe pear, fig and roast hazelnut. The middle palate is invigorated with dynamic acid backbone and edgy minerality, bringing balance and concentration to the long finish. "

In the mouth stone fruit, pink grapefruit, Tahitian lime, blood orange, raspberry with a gentle mouthfeel. A food friendly wine that works with most styles, sauces and preparations.
Pairs well with full flavored fish, pork chops, and chicken. Also try with crispy kale and stir fried vegetables. All you really need is dark, bittersweet chocolate!

Ripe pear, honey and toasted-almond notes weave across the palate as a rich mouthfeel is picked up by fine yet persistent bubbles. It is a delicious, mature wine that shows how complex and rewarding California sparkling."
WINE ADVOCATE 94 POINTS - "The 2008 Reserve has a lovely spiciness to the citrus and berry preserves with notes of clover honey, croissant, yeast extract and potpourri, plus a touch of allspice. The palate fills the mouth with toast and berry preserves flavors with loads of baking spice flavors coming through and a good, long, refreshing finish."

This rose's multi-faceted palate presents a cornucopia of succulent red summer fruits that are just the thing to complement the salt infused flavors of your Easter ham. Robert Parker really flipped for it as the below review suggests.
