    Founded as a dry community, Evanston, Illinois was the birthplace of the Women's Temperance Movement and home to Frances Elizabeth Willard, an influential protagonist in the story of Prohibition. As the Temperance Movement approached a boiling point, abstinence slowly began to creep across the country and Willard and her league of temperance supporters turned Evanston into a stronghold.

    For over 100 years, Evanston remained a dry town. It wasn't until Paul Hletko, owner and master distiller at Few Spirits, began lobbying the town that the antiquated laws were lifted. "I'm the vice president of the PTA at my kids' school and I coach their soccer and T-ball teams,"Hletko says. "People around town know me and what I'm about, which is handy when you're looking to change 100 years of laws."

    Today, hidden down a dark alley in a former chop shop, Hletko and his skilled team are producing another batch of Few Spirits Barrel-Aged Gin. The gin is crafted from a mash of corn, wheat and unmalted barley, which is infused with a secret recipe of botanicals, each individually selected for the way it interacts with wood. As its name suggests, Few Barrel-Aged Gin is laid to rest for four months in five-gallon, new American oak barrels which have been toasted with a #3 char. As a result, the gin has a soft amber color, and a nose filled with liquorice candy, citrus and clove. The palate is earthy and balanced, with flavors of fresh grain and sugar complemented by light, oaky undertones. The finish is soft and delicate, with notes of caramel and brown sugar.

    In the early 18th century, William of Orange prohibited the importation of alcohol into England. At the time, nearly all of the gin being consumed in Britain was being produced in the Netherlands. As a result of the prohibition, English citizens began crafting their own gin at home. Within a few years, one in three homes in London were making their own version of the spirit. In response to gin's popularity, King George II introduced the Gin Act of 1736 . The act levied a tax of £50 on each British citizen hoping to produce and sell gin. By 1742, only two British distilleries were in compliance with the Act and paying the tax.

    Shortly after the Gin Act was imposed, a family of independent London distillers crafted a new gin recipe, which they named "Fifty Pounds" in defiance of the Act. The recipe remained lost for generations until it was discovered by the family's descendants, who recreated the gin using the same unique ingredients and traditional distillation methods the family had used centuries ago.

    Today, Fifty Pounds Gin is produced at the small yet legendary Thames Distillery located in the heart of London. The gin is crafted using botanicals sourced from four different continents, including juniper berries from Croatia, coriander from the Middle East, grains of paradise from Africa, savory from France, orange and lemon peels from Spain, liquorice from Italy, and angelica root from England.

    As a result, the gin has a clean and fresh aroma with hints of citrus and juniper. The aroma gives way to smooth herbal undertones, including touches of orange, grapefruit, lemon, coriander and ginger. The finish is slightly warming and crisp.

The second Gin uses a 'Gin-Head? type still with a basket of botanicals on the top of the still for the alcohol vapors to pass through to produces a much lighter, more aromatic style of gin. These 2 Gins are blended and then crazy cucumber shows up to party and brings Bulgarian roses as a gift. Describing it is humorous, but the nose is more like perfume than gin--in a good way; there are aromas of rose, cucumber, coriander skin. gardenia, oleander, cinnamon and citrus pith that are closely woven together. The flavor is very floral with a solid spice component to keep the palate awake. It also shows thyme, coriander, cardamom and a persistent tingling. This is very interesting Gin. Try it on the rocks with a cucumber slice or in any Gin cocktail.

    What was that? Aquavit from Portland, Oregon? Wait!! I can explain. You see Christian Krogstadt, the distiller at House Spirits in Portland, is a second-generation American whose grandparents emigrated from Norway to the U.S. So he grew up drinking Aquavit. As a tribute to his heritage—and also because aquavit is delicious— Christian created his own version based on a traditional Scandinavian recipe. The nosing reveals and leads with anise, maybe some fennel, but definitely anise; it is sharp, clean and dry. The focus of the aroma is intriguing and inviting. The flavor is definitely caraway, toasted fresh Russian rye bread and background flavors of anise, which is a surprise because the anise was such the star in the nose. The finish is an iterate, delicate fade of the equipoised flavor with a lovely sapidity all the way through the lingering aftertaste. This aquavit is scrumptious, extraordinary and harmonious; try it chilled with big, bold foods or in an adventurous cocktail.
