The most recent release of Rhys Vineyards ‘Ultra Brut’ Santa Cruz Mountains Sparkling Wine is comprised solely of estate Chardonnay hailing from the Mt. Pajaro Vineyard (elevation 860 feet) which freatures a mix of Shale and Sandstone soils. Mount Pajaro is a special place for Chardonnay and this cold northwest-facing block planted for sparkling wine has turned into a tremendous site for making world class Blanc de Blancs. This wine was fermented in a mix of 225L used wood and 225 and 300L stainless steel. It is based (77%)on the 2018 harvest blended with 23% 2017 juice. It was disgorged on June 6th, 2021 and finished with a dosage of 3.5g/L.
Expect a bright and energetic wine with classic sparkling characteristics of white and yellow fruit, citrus peel, and a touch of brioche. The low dosage highlights the terrific energy and vibrant acidity, making this a sparkling wine that is both immediately approachable and ageworthy. Very limited with just 132 cases produced.
