If you do not yet know the name Paul Lato, and you haven't heard us talking about him in our store, then it's time to listen up! We are telling you right now that Paul Lato is producing some of the most exciting Pinot Noirs, Chardonnays, and Syrahs coming out of California's Central Coast! After working as a Sommelier in Toronto, Paul decided to change gears and work in winemaking. Before he even had established his name in the wine world, esteemed critic Robert Parker tasted the wines and suggested that Paul hurry up and come up with a label, because Paul had true talent. Paul only works with premier vineyards; he tastes wines from other producers who use fruit from a potential vineyard, and if that wine excites him, then he tries to get the best fruit from the property.

The 2019 vintage of this wine was the most exciting domestic Sauvignon Blanc our buyer had tasted all of last year! Several key members of the wine staff thought that was somewhat of a wild statement, but when they tasted the wine, they could not argue the fact that this Sauvignon Blanc was a knockout! The 2021 has just been released, and it is every bit as good. Coming from Alecia Moore's Two Wolves vineyard in the Santa Ynez Valley, the vineyard is organically farmed, and produces grapes of intense flavor and purity. This beauty earned 95 points from Jeb Dunnuck.

JEB DUNNUCK 95 POINTS - "I love Paul's Sauvignon Blanc, and his 2021 O Sole Mio Sauvignon Blanc Two Wolves Vineyard is a winner, offering a clean, crisp bouquet of white grapefruit, crushed citrus, white flowers, and honeyed minerality. Beautifully balanced, medium-bodied, and textured, with bright, vibrant acidity, it's a brilliant effort that will be about as versatile as they come on the dinner table. I would drink bottles over the coming couple of years while the fruit is vibrant and fresh, yet I certainly wouldn't be surprised to see this have an interesting evolution over the coming decade."
