Jacques Lassaigne’s 4.7 hectares of vines are situated in Montgueux (Aube), one of Champagne’s ‘underdog’ regions. Here, soils are limestone-rich, similar to those in Mesnil, and lead to high-acid fruit. Jacques’ son Emmanuel now spearheads the estate’s vinification and made the radical decision to bottle wines from individual parcels. Only native yeasts are used and all disgorgements are done by hand-- a very uncommon practice in the region.
his vintage Blanc de Blancs delivers aromas of white-fleshed fruit and lemon, with brioche notes. The palate echoes the same patisserie aromas (butter, cream, marzipan), power and vinosity with great length, delivering freshness and chalky notes.
