This small production sake comes with a uniquely high malic acid level, making this innovative sake is "a natural" to go with seafood like oyster, lobster, crab and salmon and compliments umami-rich shellfish (as it only has only 1/100th of iron compared to wine) making it an excellent pairing beverage with any seafood that will not leave a metallic aftertaste like many wines do.
It has refreshing acidity with a hint of sweetness and is reminiscent of Chenin Blanc or Gewurztraminer
