This is pure, minimal intervention winemaking. Due to this, expect significant 'sediment' as in vintage port. Not adding sulfites also leads to unique aromas and flavors that are not found in typical reds. Extra full-bodied but soft in texture, this will give you nutty notes like in sherry, with carmelized, cordial-like red fruits and hints of wildflowers, baking spices, and roasted notes like coffee and dark chocolate (note: no oak treatment here), and as it ages, undergrowth and musk. Aged 44 months in concrete and glass. Try at a cool 13C (55F).

Dettori takes pride that they use no synthetic chemicals in the vineyard, nor do they make additions and "corrections" to the wine apart from minimal additions of sulfites as needed (no SO2 is added to the must, though, so that the native yeast can do their job). Unfiltered, unfined, and and aged in cement, not oak. The winemakers suggest pouring the wine and giving it time to "breathe." Their philosophy about wines can be summed up as: "They are what they are, not what you make them."
