Made using a brief 8-month aging under flor, a cover of yeast that helps protect the wine from oxidizing too much, as used in Sherry production or in some Jura wines. This provides a characteristic nutty, character as a counterpoint to the appley fruit of the variety, making for a dry, refreshing wine with savory-fruit interplay that's perfect for Mediterranean appetizers.

WINE ADVOCATE 91 POINTS - "The just-bottled 2018 3 Miradas Vino de Pueblo is the village blend from Riofrío Alto and Cerro Macho from the much cooler 2018 vintage. There were notes of youth here, apples and green almonds, soft and tender, still quite fruit-driven and without the spicy and nutty notes that should come later with some time in bottle. However, 2018 is a much cooler year, and in years like that, the wine is more expressive of the soil and the effect of the flor yeast is milder when it comes to aromas and flavors. It's noticeable in the texture, where the wine was sharper to start with, but it has been sharpened more by the effect of the veil."

"Alvear is one of the most historic wineries in Spain. It is the oldest family owned winery in Spain, the second oldest winery, and the oldest winery in Andalucía, making it the historic producer of sherry style wines produced in Montilla-Moriles, the home of the Pedro Ximénez grape. With the Tres Miradas project, their latest collaboration with the dynamic Envinate team, they hoped to express the terroir of their home, Montilla-Moriles, but without the interference of the ageing process used to produce classic styles of Montilla. These produce some of the best sherry-style wines in Spain, but remove the terroir of the vineyard through the ageing process.
