is... it has an oily rich mouth-feel that is packed with white pepper,
Serrano, blossoms, green peppercorn, maize and creamy apricots... it is
saporous, intricate and incredible. The finish is lithe, lingering to show
bright minerals, dried flowers, agave and princely peppered finesse-
absolutely amazing. This would make a great drink, but wait till the 3rd
bottle... the first 2 can be sippers.

LEGUAS REPOSADO
8 months in white oak barrels have made Reposado 7 Leguas the only one in
its class. Hay-colored with intense yellow hues and greenish highlights, it
bears the scent of aromatic wood and shows its character in its powerful
flavour of intense agave and wooden notes. The open agave, peppery nose
progressed into a wonderfully smoky, spicy, sweet agave taste experience.
The body was even better when all the tastes came together and literally
danced across my tongue in a long, enduring finish that lasted for quite
some time. This Tequila is as smooth as the other finest reposados on the
market. Because of the aforementioned attributes, 7 Leguas will always have
a place in my bar and deserves to stand alongside the very best tequilas
available.
Aroma: A nose full of fruit, and caramel, with lighter notes of
spices and earth. Initial Taste: A semi oily mouth feel. A slightly woody entry with no
bitterness. Body: A well rounded body, full of slightly woody agave. Lighter
notes of caramel, cinnamon, and earth. Finish: A slightly fruity finish. Semi heated for a medium duration.
With a fruity caramel lingering.

April is Earth month so we decided to look at ‘earthy’
aperitifs, digestives and fortified wines. They are excellent as an
afternoon delight with a soda spritz or in a cocktail, and this as a perfect
chance to highlight them so you can be on the cutting edge of ‘Old/New
School’ Spirits couture (as all of us desire to be).
APEROL
APERITIF Aperol is
an Italian aperitif originally created in 1919, but it took a while to get
to the US-- it was well worth the wait. Some of the ingredients that shine
through are bitter orange, gentian, rhubarb, and cinchona (quinine); the
flavor and color is articulated by a subtle blend of the ‘known’ ingredients
and a secret array of herbs and roots, using a recipe that has been
unaltered since its creation. Delectable aromas of citrus, roots and herbs
invite you to drink. The palate focus is oxidized grapefruit with a touch of
creamy vanilla. The finish is fresh and supple with a lively citrus pith
aftertaste-- gorgeous!

CAMPARI Campari
is a bitter aperitif created by Gaspare Campari in the 1860’s. It is a
complicated mix of more than 60 natural ingredients including herbs,
chinotto (a bitter citrus), vegetables, spices, barks and fruit peels that,
when perfectly combined, produce an elegant, lingering, bitter
appetite/palate stimulant. There is a saying about Campari: “It is the third
drink that will win you over.” That is because 1 and 2 are such a surprise
to your palate. Try this on ice, with an orange wedge squeezed into it and
soda water to the top, or in a marvelously delicious cocktail (Negroni,

CHARTREUSE GREEN
Introduced in 1605, Chartreuse is a full, complex and exquisitely unique
treasure; it is sweet, herbal, spicy, earthy, deliciously sapid— all at same
time. This naturally green liqueur derives its color and flavor from the 132
various plants that are used to make it. The aromas are so plentiful it
would be unimaginable to capture all of them, but darn fun to try. The
flavors are equally complex/elusive, but you can pick out basil, fennel,
evergreen, verbena, cinnamon and hyssop; alas, those descriptions do not
even begin to reveal the magic inside of the bottle. You just ‘must try’
this to believe it.

1860. It is made from a recipe including ‘around’ 70 ingredients. The nose

CAROLANS IRISH CREAM
Honestly, Carolans is a staple around my house. Try it and you’ll see why.
It begins with aromas of creamy condensed milk, toasted almond, vanilla,
sultanas, heather honey and fragile spice. These evocative scents articulate
themselves throughout a lithesome, silky palate entry with a pleasantly
sweet delicate body that is surprisingly balanced for being as rich as it
is. The finish resolves these flavors in a clean long fade. Having never met

PADDY IRISH WHISKEY 1L
Originally known as Cork Distillery Company Old Irish Whiskey, Paddy was
first produced in 1789 (name changed to Paddy in 1912). In 1881 the company
hired a young local named Paddy Flaherty as a salesman. If you crossed paths
with him, he made sure you tried some of his whiskey. Soon every customer
was calling and requesting “Paddy Flaherty’s whiskey.” This went on until
1912 when the distillery officially renamed it. This whiskey has been away
from the US for a long time, and we are glad to have it back. Aromas of soft
vanilla caramel with hints of light grains and persimmon resolve on the
palate entry that is smooth, brisk and clean-- this whiskey is delicate
finesse. The finish is smooth, crisp and short with a tiny touch of spice at
the end. Try this any way you can think of—it will work.
