This Canadian whisky was developed to shine in elegant nuance as a simple sipper and aged for eight years and
blended to subdue and harmonize all of its disparate flavors. On the nose there is Jonathan apples, Asian pear, firm
peaches and delicate fruit blossoms subtly muted in soft, sweet tones with sandalwood wafting in the background. The
palate is an elusive demonstration of floral tones (flowers from apples, pears, oranges, honeysuckle and verbena). A
slight bitterness on the back palate introduces the spice elements that burst animatedly and resolve to a finish with
clean candied fruits (orange zest, apple skin) which fade showing honeycomb and a touch of vanilla creaminess.
This is easy drinking whisky. It works on its own, on ice or in a well made drink!
The Ancient Age Distilling Company has a rich history first established at old Leestown Settlement, an early transportation center in frontier Kentucky. Clear limestone water and accessible trade routes made the area perfect for making whiskey. From the very first barrel, Ancient Age was known for its fine, smooth, mellow whiskey, beginning a tradition of excellence that continues to this day. Steeped in history and tradition, Ancient Age Kentucky Straight Bourbon Whiskey has branded America's best bourbon.
Baker's Small Batch is named after Baker Beam, another bourbon luminary in a long line from the Beam family. It starts with a rich, deep nosing filled with smooth aromas of vanilla and caramel set against a vibrant wood spice that hints at cinnamon, allspice, mint and hot leather. After you let it breathe, careful investigation yields roasted sunflowers seeds and candied ginger covered in dark chocolate, banana chips and stewed dates. On the palate these aromas articulate and build adding more
nuts, oxidized plum and wonderful iterations of cereal grains. The flavors seem to rush on you, but a patient nosing will prepare you for the avalanche-- which once achieved resolves scrumptiously into a mellow, prowling finish with elegance and finesse. Try this with a splash of water or however you have your bourbon.
This unique recipe calls for a larger percentage of small grains in the mash (rye and
barley) and eight years gently resting in the wood. During the mashing and aging,
the spicy flavor of the rye marries with the sweet smoothness of the corn for a
character unlike any other bourbon. Enriched by a hint of peppermint, Basil
Hayden's mellow taste and dry, brief finish is delicious sipped neat or on the rocks.
It's perfect for those who enjoy a light-bodied bourbon.
BERNHEIM SMALL BATCH KENTUCKY STRAIGHT WHEAT WHISKEY 90PF
Since its launch in September 2005, Bernheim Original Kentucky Straight Wheat Whiskey has quickly gained attention as the first wheat whiskey ever released on the U.S. market. Distilled by Heaven Hill, the makers of the Evan Williams and Elijah Craig brands, this small-batch liquor comes from a mash containing 51 percent winter wheat, making it different from its bourbon cousins, which contain at least 51 percent corn. Corn and malted barley make up the other 49 percent of Bernheim Original’s mash, which was distilled in January 2000 and aged for five years.
Heaven Hill befriends a new class of whiskey drinkers with this release, which has a noticeable absence of rye in its mash. The resulting whiskey is clean, with a lot less of the bite and bitter aroma that turns some people off from rye whiskeys. Sweet on the nose but less on the palate, this spirit has subtle aromas of oak, honey and wheat, which come out more if the whisky is cut rather than neat. On the palate, its flavors are refined but not as complex as some well-aged bourbons. The finish is warm.
This small batch bourbon is blended from casks averaging 8 years old at Black Maple Hill. It is surprisingly smooth at 95 proof, and is a truly enjoyable small-batch product.
Nose
Big toffee start and gets deeper still. Old leather armchairs and sweet pipesmoke.
Palate
Enormous from the off but beautifully shaped by shafts of honey and vanilla.
Finish
Now comes into its own, with spice and caramel interweaving.

What a treat this fabulous bourbon is. Absolutely everything in proportion.
In 1988, Booker Noe introduced his own signature bourbon,
Booker's True Barrel Bourbon. Inspired by a 200 year-old tradition,
Master Distiller Emeritus Booker Noe, grandson of Jim Beam, created
his very own bourbon. Unlike anything you have ever tasted, Booker's
is the only bourbon bottled straight-from-the-barrel -- uncut and
unfiltered -- a true connoisseur's sipping bourbon.
Buck is a new single barrel, Kentucky Straight Bourbon that has been aged for 8 Years and bottled to reflect the spirit and hard work of the rodeo. The first scents are cereal grain stewed with corn syrup, mint, caraway, caramel, roasted filberts and vanilla. These aromas are inviting and evocative. On the palate these flavors arrive abruptly with added spice tones: cinnamon,
nutmeg, ginger, pepper... Very bold and spirited, these flavors frolic to resolve on menthol and evolved oak nuance before settling down to supple toffee. The finish is warm, tangy and lingering, loaded with oak and spice. This is a fun whiskey to try with water, on the rocks or in a nice beverage.

BUFFALO TRACE WHISKEY [#166538] SALE $20.99
This is the first single bottle offering of Buffalo Trace, and when the opportunity came up to select our cask we were very excited! The nose, on Barrel # 51, leads with a satisfying depth that is both contemplative and inviting. It is filled with vanilla, fresh timber and apple pie. The taste and texture are rackety pliant redolence checked by rich oak notes and iterated by endless nuances (vanilla, spice, corn and rye) each seemingly rendered oily. Smooth, creamy flavors finish and evaporate into caramel and vanilla richness that dries at last as the rye offers an extra layer of soft spice. This whiskey has rattling equilibrium usually unseen in a single barrel offering: big, balanced and complex.
Buffalo Trace White Dog #1 is the unaged distillate
that would become, if it were aged, Buffalo Trace Bourbon.
Bottled at 125 Proof, this stuff packs a doggone good
wallop! The nose is full of underripe quince or persimmon,
hard topical fruit, a field of flowers, jicama, lima bean and
maize. The palate is copious, revealing the scents here
as flavors that escalate to show more tight grains, bright
roots (angelica, orris) and light camphor. The finish tarries
along dawdling and spicy with a minty titillating after taste.
Try this with water, on the rocks, in a cocktail as a fun sub
for vodka—this stuff is so tasty.
BULLEIT BOURBON FRONTIER WHISKEY 90PF
Silver Medal - 2006 San Francisco World Spirits Competition Bulleit is owned by a small family in Lawrenceburg. It has been aged seven years and has a high rye component in the mash which gives the bourbon a rich, oak aroma with hints of vanilla. Made in small batches and very, very well balanced.
BULLEIT BOURBON [#165408] SALE PRICE:$17.99
Tom Bulleit is an American gentleman. He came by Hi-Time the other day to say hello and talk about bourbon-- what a nice guy! Bulleit (bourbon) approaches with dry scents that are brisk, gripping and calefacient. The aromas are dried herbs, cereal and flowers with brown sugar, spice and leather. The palate entry is sweet and followed by grappling spice that is firm, plump and racy with honey and marmalade. Here the finish is sated with basil, sage, smoky vanilla, mahogany shavings and soft-tanned leather that bustle quickly, then dissipate promptly. This bourbon is from a recipe Tom’s Grandfather worked out and it makes a tasty whiskey suitable for drinking or mixing.

Bushmills Malt 16 Years Old is a premium, rare single Irish malt whiskey. Unique "Three Wood" finishing adds elements of depth and flavor to the already clean, non-smoky taste of Bushmills Malt Irish Whiskey. This exceptional malt whiskey is matured in three different wood barrels for unparalleled taste and quality. The whiskey is first matured in American bourbon barrels and Spanish Oloroso sherry butts for at least 16 years. While lingering in the bourbon barrels and sherry butts, the spirit develops toasted wood, vanilla and sweet nutty flavors. The malt whiskey is then vatted and married for many months in large old port wine pipes. Here, a nice finishing touch of sweet wine character is acquired, and all of the flavor elements mature and mellow together.
