Whole grape clusters were gently pressed and the juice moved by gravity to barrel. Fermentation took place with indigenous yeasts in 80% neutral French oak barrels and 20% stainless steel. The wine then aged in the same French oak barrels for seven months with a bi-weekly stir, during which complete malolactic fermentation took place.

Spending 18 months in 25% new French oak, it has tons of honey, caramelized peaches, apricots and sugar to go with a full-bodied, supple and layered feel on the palate. It packs a punch with regard to its sweetness (100 g/l), but it stays lively and drinkable. Enjoy it over the coming 3-5, although it could have an interesting evolution beyond that as well.

for several small Napa Valley wineries, and Kent is the winemaker at Kenefick Ranch in Calistoga, and all the fruit for this comes from Tom Kenefick's vineyard, which is entirely sustainably farmed.

The Vieux Carre bottling is comprised of 34% Grenache Blanc, 33% Viognier, and 33% Marsanne. This wine was fermented in neutral oak barrels for balance, then aged for six months, with 10% of the wine being aged in stainless steel. This wine starts with Yuzu citrus peel, underlined by a spice complex of anise and freshly grated vanilla bean. This is supported on the palate by subtle notes of honey suckle, meyer lemon, fresh honeydew melon and pie crust. The well-balanced acidity finishes long and clean.

The fruit was gently whole cluster pressed, transferred to neutral barrels (5-20 year French oak), cold-fermented at 45°F for three months and prepared for bottling in late March. Cold fermentation, neutral vessels and the avoidance of malo-lactic fermentation were employed to retain the wine’s freshness and exotic expressions. Yields were 3.2 lbs/vine (3.0 tons/acre).

Notes from Winemaker Nicolas Elliot: "The Undisclosed was made with a lot of the same thought process that goes into the red wines I produce. The Viognier was picked very ripe and has all of the wonderful aromatic and viscous qualities that I look for in a Paso Robles Viognier. The Roussanne was picked with a bit more restraint and provides the backbone of the acidity while adding unique stone fruit flavors. This wine is very rich in taste yet still vibrant enough to enjoy on a summer day. On the nose and palate, there are amazing tropical-fruit qualities that remind me of mango, dried pineapple, and wet stone. These are coupled with pear, honey and apricot that is most likely from the Roussanne component. Even early in its youth, this wine is showing very well and will continue to age for many years to come. My best guess is that this wine will easily hold up for 5 years or more. This wine has gone through full malolactic fermentation adding to it's richness. This is very limited in production."
