Tor is brazen enough to say that his Noble Rot can share the d’Yquem stage in every way. It is made in the vineyard; the varietals are Semillon and Sauvignon Blanc, all hand-picked, barrel-fermented, then aged in small barrels. They were only able to make 2 barrels in 2008, and the grapes were picked at 35.4 brix.

in Mendocino and Lake Counties, the grapes for the bottling definitely benefited from the large diurnal temperature swings both areas are known for. This allowed for slow maturation of the fruit, leading to more complexity of flavor in the finished juice. Refined and classy, the nose leads with beautiful notions of stone fruits, lemon grass, honeydew melon and a light river water mineral touch; a very rich, rounded nose. The palate combines beautiful viscosity and lushness with good background acidity and flavors of key lime, nectarine and a touch of carambola (star fruit), all lightly rinsed in more river water (minerality). This is an ideal food companion (oysters on the half shell, white fish, white-sauce pastas, cheeses) but will also do incredibly well solo (think friends, patios, sunsets, that kind of thing). The Uppercut name should be familiar: their 2007 Cab was our 2010 "Best Cabernet Under $20."

consistently produces ripe and full flavoured fruit. The fruit was machine-harvested in the cool of the night to minimise transport stress and maintain fruit integrity and purity. After receiving skin contact post crushing, the juice was pressed and went to stainless steel tanks, where a long and cool fermentation took place. Subsequent to the fermentation, the wine remained in contact with the lees for three extra months for maturation, before it was then fined out with gentle fish and milk products and filtered. The nose is fresh and crisp with scents of wet grass, gooseberry, sour pêche and a touch of créme anglaise. The palate keeps it, again, fresh with great acidity and vibrant flavors: lemon grass, gooseberry, river rock, mown grass, great viscousity and a nice finish. This is why New Zealand Sauvignon Blancs are so well-loved; the wine is big but impeccably balanced, with a touch of the sauvage you expect from the grape yet enwrapped in harmony between the smell, taste, texture and lingering, delicious finish.
