of Domaine Des Deux Roches in the Mâconnais. Looking to expand, they focused on Languedoc where land prices were much better than in Burgundy. Antugnac quickly became the clear choice. The domaine is roughly fifty miles west of Carcassonne in a lovely, isolated mountain valley hidden in the Pyrenean foothills, anchored by the old village of Antugnac (its church was built as a kind of bastide, or fortified building, to protect the villagers from marauding bands in the middle ages). The vineyard parcels start at the village but the majority climb the heights of the south-facing flanks, growing between 280 and 530 meters above sea level in meager limestone soils.

In 2000, the partners installed David Serodes as manager of the estate. It proved to be an inspired choice—Serodes understood at once that what this location offered was Languedoc’s southern exposures tempered strongly by mountain coolness. “Aux Bons Hommes”: The translation is “to the good men,” which comes from Languedoc’s past when it was the region of the Cathars, a religious group that was known for its asceticism and good works and thus earned the moniker of the good Christians, or good men (although the Church rulers thought otherwise and finally decided to kill them all, which it did with a crusade in the 13th century; thereafter Languedoc, heretofore a progressive region of high culture and tolerance, fell into a long economic decline).

The nose on “Bons Hommes” is touched with notes of brown spices, dried plums, sea salt and tilled earth. The palate is filled with lush, ripe red fruits, berries and excellent viscousity-- upfront acidity lends structure as soft tannins round it out for balance. The finish is long and sweet with more orchard fruits, earth, spice and a light herbal tone. Merlot, Cabernet Franc and Syrah.

some of the drama provided by the intimidating structure of the Mourvèdre. One of the hallmarks of Pradeaux is that the grapes are never destemmed. The result is a wine of ferocious tannin in its youth, another reason for the prolonged aging in these large wooden barrels, a time for the wine to repose and find its identity as it emerges from the cocoon of tannins to reveal an exceptionally complex crowd of aromas and flavors. Although situated mere steps from the Mediterranean, harvest at Pradeaux (always manual) frequently starts in earnest for the Mourvedre during the first weeks of October. The average age of the vines is approximately 35 years and harvest levels are quite low, often in the range of 25 hectoliters per hectare. Fermentation occurs at temperatures between 28 and 30 degrees Celsius and the wines are racked into large oak ovals and foudres where they rest with occasional rackings for four years before being bottled. Neither new oak nor small barrels are ever used at Pradeaux and the red wines are never fined nor filtered. Depending on the vintage, we import between 300 and 500 cases per annum for the US market."

The vineyards of Clos Sainte Magdeleine are particularly stunning. They jut out on a private cape to meet majestic limestone cliffs, poised spectacularly above the sparkling, azure Mediterranean. With landscapes such as these, it is only fitting that writers and poets alike have found inspiration in Cassis. Only a handful of vignerons today are fortunate enough to produce A.O.C. Cassis, and the small quantities available are largely consumed locally with fresh fish—the best way to enjoy them. The Sack-Zafiropulos family has been making wine here for four generations and has continued to craft wines of grace and finesse, just as they were when founder Jules Savon won the Gold Medal for the domaine at the World’s Fair in 1900. That they share their limited quantities with us makes this long-term relationship all the more special. Viticulture and vinification at Clos Sainte Magdeleine is under the direction of François Sack. The domaine bottles both a white and a rosé, the latter of which is especially limited. Sack just started the three-year long conversion to organic viticulture, a philosophic progression after years of sustainable farming. Clos Sainte Magdeleine’s success lies in an uncanny ability to capture a dichotomous nerve and sun-kissed unctuousness in their wines, making them both incredibly food-friendly and delicious entirely on their own.

Cahors is known as the “black wine” of the Southwest—the deeply inky, earthy wines that seem to complement the regional fare of duck (and duck fat!) so wonderfully. Cahors is also the birthplace of Cot, the grape more commonly known as Malbec—a fascinating contrast to its South American brother. Today, the blend consists of 80% Malbec and 20% Merlot, creating an intense wine that juggles elegant rusticity with everyday drinkability. In fact, the ’59 Clos la Coutale is still drinking beautifully, especially with cassoulet, but his wines also pair just as well with a simple steak and potatoes.
