of Domaine Des Deux Roches in the Mâconnais. Looking to expand, they focused on Languedoc where land prices were much better than in Burgundy. Antugnac quickly became the clear choice. The domaine is roughly fifty miles west of Carcassonne in a lovely, isolated mountain valley hidden in the Pyrenean foothills, anchored by the old village of Antugnac (its church was built as a kind of bastide, or fortified building, to protect the villagers from marauding bands in the middle ages). The vineyard parcels start at the village but the majority climb the heights of the south-facing flanks, growing between 280 and 530 meters above sea level in meager limestone soils.

In 2000, the partners installed David Serodes as manager of the estate. It proved to be an inspired choice—Serodes understood at once that what this location offered was Languedoc’s southern exposures tempered strongly by mountain coolness. “Aux Bons Hommes”: The translation is “to the good men,” which comes from Languedoc’s past when it was the region of the Cathars, a religious group that was known for its asceticism and good works and thus earned the moniker of the good Christians, or good men (although the Church rulers thought otherwise and finally decided to kill them all, which it did with a crusade in the 13th century; thereafter Languedoc, heretofore a progressive region of high culture and tolerance, fell into a long economic decline).

The nose on “Bons Hommes” is touched with notes of brown spices, dried plums, sea salt and tilled earth. The palate is filled with lush, ripe red fruits, berries and excellent viscousity-- upfront acidity lends structure as soft tannins round it out for balance. The finish is long and sweet with more orchard fruits, earth, spice and a light herbal tone. Merlot, Cabernet Franc and Syrah.

up of heterogeneous clay that varies in color between red, ochre, and blue. At 270 meters, it sits at the highest altitude of all the vineyards. The parcel’s complex sedimentation is largely due to the subduction of a tectonic plate which has surfaced the oldest rock outcroppings in the whole of the appellation. Surrounded by garrigue and pine forest, the grapes translate to earthy, gamey wines. La Migoua has the smallest amount of Mourvèdre in the blend, with the highest percentage of Grenache of the three cuvées. La Tourtine sits just above Cabassaou. The soil here is more homogeneous, with rich clay. La Tourtine produces powerful, tannic wines with gorgeous fruit character. Since Cabassaou sits lower on this hillside, it is protected from the strength of the Mistral, enjoying temperate breezes and maximum sunshine. There is ripeness, density and power in these wines.

The vineyards of Clos Sainte Magdeleine are particularly stunning. They jut out on a private cape to meet majestic limestone cliffs, poised spectacularly above the sparkling, azure Mediterranean. With landscapes such as these, it is only fitting that writers and poets alike have found inspiration in Cassis. Only a handful of vignerons today are fortunate enough to produce A.O.C. Cassis, and the small quantities available are largely consumed locally with fresh fish—the best way to enjoy them. The Sack-Zafiropulos family has been making wine here for four generations and has continued to craft wines of grace and finesse, just as they were when founder Jules Savon won the Gold Medal for the domaine at the World’s Fair in 1900. That they share their limited quantities with us makes this long-term relationship all the more special. Viticulture and vinification at Clos Sainte Magdeleine is under the direction of François Sack. The domaine bottles both a white and a rosé, the latter of which is especially limited. Sack just started the three-year long conversion to organic viticulture, a philosophic progression after years of sustainable farming. Clos Sainte Magdeleine’s success lies in an uncanny ability to capture a dichotomous nerve and sun-kissed unctuousness in their wines, making them both incredibly food-friendly and delicious entirely on their own.

that rise up from the Lot River. He farms sixty hectares of land along the alluvial terraces of the Lot Valley that are rich in siliceous, clay, and limestone soils. A.O.C. Cahors is known as the “black wine” of the Southwest—the deeply inky, earthy wines that seem to complement the regional fare of duck (and duck fat!) so wonderfully. Cahors is also the birthplace of Cot, the grape more commonly known as Malbec—a fascinating contrast to its South American brother. Today, the blend consists of 80% Malbec and 20% Merlot, creating an intense wine that juggles elegant rusticity with everyday drinkability. The scallop shell (coquille is French for “shell”) on the label is a very appropriate image to use for wine from Sainte Rose for two historical reasons. Firstly this shell was a waymarker for Medieval travelers on the pilgrimage route to Santiago de Compostela. Secondly, they have found actual scallop shells in one of the vineyards that date back to Roman times as there was a Roman settlement on the outskirts of what is now their local village. Le Coquille D’Oc is comprised of 40% Grenache, 40% Syrah and 20% Mourvedre.

Ahh--the southern French wine nose never ceases to fascinate (usually in a Pavlovian way) and amaze us. La Coquille blends notes of spice, black tea, leather, meat, cherry vanilla fruit and sea salt. The palate is equally tempting, with oodles of sweet, forward fruit that is balanced by good amounts of tannin and grip. Notes of both red and black plum, blackberry fruit, black pepper and mixed spices envelop the palate while the rounded tannins counterpoint nicely. The finish is lengthy and gorgeous. So much for so little!
