Winery Notes: In our effort to make relatively low alcohol wines, this Gewurztraminer comes in at just 12 %, having been picked and crushed at 21.2 sugar. The resulting wine is palest straw in color with .64 acidity and a low pH of 3.33. It is quite tart at the moment with the lovely taste of white flowers and lychee. We consider it a flawless wine and a fine foil for spicy south of the border and Asian flavors. Our present favorite is a Mexican Corn dish either on the cob or as a side dish flavored with chipotle chili butter, chopped cilantro and grated Queso Fresco, the Mexican white cheese. The crisp, light, dry Gewurz enhances the sweet corn, spicy chili, and salty cheese flavors. Enjoy!
