Along the years a devoted team was gathered which characterizes itself as being young, professional, dynamic and international. And the wine they're making? Quite impressive! This Cab/Merlot is complex, flavorful and endearing. The nose is rife with dynamic earthy terroir, mixed plums and berries, black pepper, mint, eucalyptus, a touch of cedar and cigar box. The palate combines forward fruit, dried cherries and cranberries and kriek lambic, with earth and spice: baker's chocolate, gravel, river bed. Moderate tannins and ample acidity keep the lush viscosity buoyant and clean.

Long referred to as “Bayten” by locals, Buitenverwachting (meaning beyond expectations) is located on the east-facing slopes of the Constantiaberg on the Cape of Good Hope. Ocean breezes make this area one of South Africa’s coolest winegrowing areas, allowing for slow ripening, resulting in grapes that achieve full ripeness while retaining fresh acidity. This wine was aged on the lees for three months prior to bottling. Bayten offers a mélange of citrus and stone fruits with honeysuckle, jasmine and green notes on the nose. The palate reveals peaches, apricots, lemon rind and lemongrass with a nice balance of richness and refreshing crispness on the finish.

This wine is a beautiful Bordeaux-style blend from the premiere winegrowing region of Stellenbosch on the western cape of South Africa. When the buyer and other Hi-Time staff tried it, we were blown away by this delicious wine! In a blind tasting, one would be hard pressed to guess where this hails from. The balance, complexity and length of this delicious bottling represents an astounding value, which competes very favorably with other red wines from around the world.

This wine begins to draw you in with its deep ruby color and the stained tears on the stemware give a preview of the nicely extracted wine. On the nose, dark fruit, red fruit and cassis are framed by well-integrated French oak, which is complementary rather than obtrusive. Baking spices, sweet pipe tobacco and a dusting of cocoa are evident. A floral element and freshly tilled earth add to the complex bouquet. On the palate, a perfect union of fruit and tannin lay the groundwork for a marriage of flavors with enough acidity to provide lift and definition. The silky tannins envelop the Kirsch and dark berry flavors and caress the tongue, leading to a long finish. This is a wine with structure, but also elegance and finesse which can be enjoyed now or over the next five to eight years. The Elgin Valley which has long been regarded as the apple and pear center of South Africa, now has some of the country's most highly regarded winemakers establishing vineyards in the area, testament to its obvious winemaking potential.

They focus on viticulture principles in order to reflect their commitment to winemaking as an expression of terroir. Technological surveys ensured that the correct grape variety, clone and rootstock combination was planted in the diverse ancient soil types. The vineyards benefit from the high altitude cool temperatures, as well as an abundant rainfall throughout the year and the prevailing cold summer wind, known as the "Black South-Easter" blowing in from the ocean 12 kilometers away. Viticulture practices and canopy management, which enhance longer ripening periods, capture in the wines the broad spectrum of flavors created in the cool climate of this unique terroir!

The focus of this wine is based on a vineyard component arising from low yielding Table Mountain Sandstone soils. Using neutral yeasts, Shannon Sauvignon Blanc expresses very distinctive and concentrated primary fruit aromas of asparagus, citrus, and some capsicum in a minerally and flinty style. The clay/shale soils however, provide the Sauvignon with flavors on the riper side of the fruit spectrum and with more structure for a broader palate. The blending in of naturally fermented Semillon, matured on the lees, provides a fuller mouth feel and adds to the complexity of the wine. This wine was vinified in a style that enhances the aging potential of Sauvignon Blanc.

Blessed with a generous sense of humor, he has been affectionately known amongst local farmers as “Houtbeen” (Pegleg) Basson. This is a medium-bodied wine with sumptuous red and black fruits. The color is medium ruby with a bouquet of strawberry preserves, plum and mulberry, which is reflected on the palate. The finish is medium in length and quite pleasing, leaving you ready for more. Wine Spectator says of this wine, “Bright and very peppery, with bouncy tobacco and spice-infused fig fruit flavors.
