Slieve (Mountain) Foy (Fathom, Understand, Penetrate) is the highest peak of two ridges of mountains that cover the Cooley peninsula; this seems a fitting name for this extraordinary, transcendental Irish Single Malt Whiskey. Slieve Foy is crafted with timeworn, classic techniques to such a high quality it could easily be placed at the pinnacle of whiskeys as a gorgeous example of that craftsmanship. It is a hand-selected, Single Malt gem (from the Cooley Distillery) that, after careful aging for 8 years in American oak, it is not chill filtered-- to retain all of the glorious flavor imbued by aging-- then bottled at 46% abv. The tempting aromas are easy revealing exquisite tropical fruits stewed with vanilla, served in a flaky fresh-baked crust with a light drizzle of caramel and clean spice dusted on top... in other words, yum. The palate begins delicately-- fruit tree blossoms, white flowers, underripe banana, grains poached with maple, lemon drops, chocolate, treacle, vanilla, spice compote and well-integrated demonstrations of oak. The beautiful, protracted finish lasts and lasts astoundingly. Try this neat or with a splash of water and time; lots of time.
