All the vineyards are contracted on a by-the-acre rather than a “per-ton” basis. This means he pays a set fee for the acreage guarantying the grower cash for his crop regardless of the tonnage. This allows him to prune, shoot-thin and drop crop for low yields that result in only high quality grapes. His winemaking style is a blend of classic and contemporary, utilizing cutting edge fermentation equipment paired with natural hands on winemaking, and an emphasis on balance. All the wines are naturally fermented and unfined and unfiltered to preserve their innate flavors and aromas.
The 2011 Chimera has a nice ruby color with a solid red core, aromas of brown sugar, bright cherry, clove, nutmeg, ginger and a touch of orange zest. A soft palate feel with good acidity and flavors of cola, plum, and wet river rock make this a classic Chimera style Pinot Noir.

The Dutton Ranch’s™ Widdoes vineyard is located between the towns of Graton and Occidental in the Russian River Valley appellation. The cool temperate growing conditions allow the grapes from this 18 year-old, vertical trained, dry farmed vineyard (meaning the vines see no water outside of rain) to ripen slowly and evenly. At this vineyard the Beringer clone Pinot Noir is planted which consistently produces a wine of finesse and balance.

In 2011 the crop yields were small, and the weather was cold. Many other producers produced the same yields and were greeted with diluted wines. But since Terry kept the yields small, those grape clusters were able to fully mature, and the resulting is a thing of beauty! The 2011 vintage has a PH of 3.55 (perfect). Full of dark fruit with a touch of cranberry on the finish, it is framed with a subtle tannin structure. All point to a wine that should age very well; only 300 cases were produced!

Some evinced toasty hints of barrel despite the percentage of new wood being low (only rising above 20-30% in the case of Chambertin) suggesting that they might be a bit “underwined.”"
