This bottling is comprised of the "Devaux" clone from France; this clone was previously used as part of Mumm’s sparkling wine program. Cropped around 1.5 tone per acre, this is an exceptionally small yield, as typical yields are around 4 to 8 tons per acre. The grapes come from Pelissa vineyard in Oakville and Blockhouse Vineyard in Yountville.
The wine was all fermented in stainless steel, with 50% whole Cluster, and 3 months "sur-lee" stirred to increase richness. The wine didn't go through secondary fermentation to preserve the bright acidity, and zero oak was used.
