pruned Carignan (a varietal commonly found in the Rhône Valley of France) located in Mendocino’s Redwood Valley. The combination of vine age, an extended growing season, and tougher soil conspire to produce complex, intense wines. The wine was cold fermented in stainless steel tanks, finished bone dry, and completed a long, slow malolactic fermentation which balanced the naturally high acidity. The resulting wine is intensely aromatic with rose petals, pomegranate, watermelon, and cranberry. Good acidity ensures a fresh, clean, vivacious profile, and keeps the mouth watering for more. By far, one of the best domestic rosés of the year!

The other reason is that this beauty offers a depth and overall quality that is rare at this modest price. The hallmark of this bubbly is its compelling, purely rendered fruit (60% Chardonnay/40% Pinot Noir), most of which is drawn from the Elke family’s highly regarded Donnelly Creek Vineyard in Anderson Valley. Winemaker Matt Evans uses a hand-cranked basket press and other equipment and practices that would be familiar to winemakers from hundreds of years ago. Evans’ traditional wine- making techniques along with a minimal regime of yeast aging (just seven months) work in concert to bolster this Brut’s fruit profile. The result is a lip-smacking, California-styled bubbly that offers pristine pear, apple and guava flavors under-scored with beams of citrus and just a whisper of yeast. A novel call for Holiday parties when you want to impress for less.

over the wine was adjusted in duration and frequency, depending on taste and yeast activity (one to three times per day). The ferments were pressed off between one and four brix and then returned to tank. Once dry, the wine was racked off lees and inoculated for malolactc fermentation. MLF was done in tank and barrel, and upon completion, racked into barrel for 20 months. Complex plum and boysenberry aromas combine with rich cassis notes and hints of pine and earth. The cold Yorkville nights preserved the wine's acidity and helped maintain the balance of elegance and alcohol that makes this wine so food-friendly. Twenty months' aging in French and American oak has smooted the palate and added a layer of vanilla to the long, concentrated finish.
