The palate is dense and concentrated with a plethora of fruit characters, plum, blackberry, mulberry, earth, iodine and black olive. Despite the richness and intensity of the attack and mid palate the experience surprisingly crescendos with a lick of spicey pepper, coupled with lovely, fined grained, textural tannins that seem to persist in the mouth forever.

Of course, many of you know Chris Carpenter as the winemaker behind some of Napa Valley's most prestigious wineries, including Cardinale, Lokoya, La Jota and Mt. Brave where he has earned a reputation for producing legendary wines. The Clarendon vineyards sourced for these wines have been a significant part of Australia’s wine heritage, supplying fruit for many of Australia’s greatest wines, including Penfold’s Grange.

In tasting the Hickinbotham wines, a common thread is apparent; they have beautiful aromatics, delicious purity of fruit and are exceptionally well balanced. All are aged in French Oak barrels, adding polish and finesse. This is a great debut for this new winemaking team, which has crafted wines which are compelling and complex.

Dark purple in color with floral aromatics and dark fruit dominating the nose. On the palate, black currant, cassis, blackberries and dark cherry mingle nicely with sweet pipe tobacco. The tannins are subtle and smooth.

Deep ruby with purple highlights, with notes of black currant, dark cherry and blueberry. The wine is dry, full bodied and nicely balanced with moderate tannins. This would pair beautifully with filet mignon.
