A complex nose with abundant fruit and spices. In the mouth, this is a fresh wine, round, long and with balanced acidity due to its well-integrated tannins. Once the alcoholic fermentationis completed via whole-cluster maceration/fermentation, the wine goes directly to barrel where the malolacticfermentation continues. The aging of the wine is done in barrels of different capacities. All oak is French and holds the wine for 11 months. It may be cellared for 10 years, certain to gain complexity and nuances. It is notclarified, nor filtered, in an effort to preserve the qualities of the misunderstood varietal, Bobal. Juan Antonio Ponce has found the nobility in Bobal and he is widely recognized as the young master of Manchuela.
