that family practiced before the Second World War. The base wine, which is 100% Chardonnay, is rested in tank for 9 months before being transferred without filtration into bottle for the second fermentation. After approximately eighteen months on the less this wine was finished with mid-Brut dosage of 10 g/l. The result is wine with fine perlage and pale yellow and the application of li its flavors are delicious and its texture is fine and creamy. It probably shows slightly lower acidity than a Champagne, but has quite enough to be very refreshing. It made for a perfect aperitif and held up well when nibbling stuff that one nibbles before a meal.

of vines as well as the winemaking, while Pierre and Eliane handle the commercial side. The vines are old, the yields low, and the vinification meticulous, leading to brilliant, precise expressions of Jura’s distinctive wine styles.
Vineyard The grapes were harvested by hand from vines aged thirty-five to forty-five, planted on red marl soils in the communes of Montigny and Arbois.
The grapes were sorted and crushed, then fermented for around three weeks in stainless steel tanks. The wine was then aged in large casks for fifteen months.
Light in body yet intensely perfumed, the rare Poulsard grape here gives a supple-textured wine full of red berry fruit alongside some earthy-animal complexity.
