some of the top wines from the Jura. They render sous voile or “under veil,” a semi-oxidative style of wine. Vin Jaune is not made every year: a committee of wine growers visits the vineyards and determine if it can be produced that year, depending on the grape quality. Jean has a knowledge of the chemistry of Vin Jaune production that is second to none and is known as the true master of Chateau-Chalon, while his son, Laurent, is trying hard to live up to his reputation.
Vinification: Pneumatic press, natural yeasts added. Alcoholic fermentation in stainless steel tank, raking one day after fermentation. The wine is kept in tank for 6 to 8 months before the malolactic fermentation, then put in barrels of Damy, at Meursault during 1 and ½ year. In the barrel, empty space is topped up, a process called ouillage. Blending one month before bottling. No fining and no filtration

of vines as well as the winemaking, while Pierre and Eliane handle the commercial side. The vines are old, the yields low, and the vinification meticulous, leading to brilliant, precise expressions of Jura’s distinctive wine styles.
Vineyard The grapes were harvested by hand from vines aged thirty-five to forty-five, planted on red marl soils in the communes of Montigny and Arbois.
The grapes were sorted and crushed, then fermented for around three weeks in stainless steel tanks. The wine was then aged in large casks for fifteen months.
Light in body yet intensely perfumed, the rare Poulsard grape here gives a supple-textured wine full of red berry fruit alongside some earthy-animal complexity.
