in clay, limestone and flint soils. After harvest, the juice is pressed immediately and aged in neutral wooden barrels for eleven months. Catherine and Didier Champalou have farmed their estate using organic winemaking practices. In the glass, the color is pale gold with a delicately woven bouquet of apples, nectarine and acacia blossoms. This is a fuller-bodied intense wine on the palate, and is off-dry with honeyed pear, marmalade and slightly nutty notes and a lasting finish. There is good acidity present, making this wine harmonious and quite balanced. Try this incredibly food friendly Vouvray with pork, shellfish, chicken and cheese dishes. the wines can be from the Loire Valley. So much expression! Sauvion's nose highlights green apple, peach and mixed stone fruits, hay, quince, stoney minerality and light florals. The palate is rounded upon entry but trimmed with nice acidity. Orchard fruits dominate in taste, peach and nectarine in the foreground, as a light touch of honeyed river water meanders in the background. Serve chilled, with maybe a bit of goat cheese.

Chenin Blanc is a quite versatile grape from the Loire Valley in France - it contains good sweetness, acidity and fruit while remaining fairly neutral in the overall palate zone (which allows things like terroir, vintage differences and winemaker treatment to affect the taste). With such characteristics, and depending on climate conditions and desire of the winemaker, both sparkling and still (dry or dessert) wines can be made - and made well.

The 2010 Yvon Mau Vin de Pays is made of 100% Merlot, and comes from the Aude -- part of the Languedoc-Roussillon region in France. The terrain encounters a sunny, mild Mediterranean climate featuring this area is known for producing wines of that over-deliver in taste and value. The wine is bright ruby-colored, and comes alive with a bouquet of fresh red cherry, roses, and a hint of vanilla. It is medium-bodied, (13% abv) with ripe cherry fruit, balanced acids and notes of red plum and violets. The wine finishes with a smooth, velvety, subtle finish, and is a tremendous buy at $7.95. Try this with burgers, steak or tomato-based pasta dishes.
