This is a Chardonnay Champagne blend based on the 2005 vintage with half the juice coming from Vertus and Bergères-les-Vertus and the other half from the nearby slopes of Mont Aimé. Mont Aimé is one of the few places in Champagne to possess a high amount of silex (or flint) in the soil, a factor which gives its wines a dark, smoky minerality that is most distinctive. The result is pale gold, full-throttled Champagne that opens with aromas of ripe pears, calvados, toast and apple cobbler. The vinous and satisfying palate showcases striking flavors of baked apples, jack fruit, nougat, wet stones and a honeyed citrus note in the finish that belies the wine’s minimal extra brut (3.5 grams/liter) dosage. If Bollinger ever developed a Blanc de Blancs we suspect it would taste a lot like this.
