If your are on a Cava budget, but are not of fan of Cava blends (Macabeo, Xarel-lo, and Parellada) this fizz is for you. The St. Vincent Brut is composed of classic Champagne varietals (80% Chardonnay and 20% Pinot Noir) that are drawn from the winery’s second pressing and finished off with 90 days aging on the yeast. While this Brut lacks the autolytic flourishes found in high priced bubbles it compensates nicely with its alluring apple, pear, and citrus blossom nose. The palate is lithe and glossy and delivers a pleasing play of orchard and citrus fruits that are gently bridled with acidity. The dosage is on the sweeter end of the Brut range which gives this fizz broad appeal. It’s a great call for Sunday brunch or casual get-togethers.
