It rarely mentioned, however, that the AOC regulations allow exceptions to this tripartite formula, and permit the use of four additional “historic” varietals; Arbanne, Petit Meslier, Fromemteau (a.k.a. Pinot Gris) and Pinot Blanc. They say, variety is the spice of life and over the years we have had some intriguing heirloom grape Champagnes from Moutard, Laherte and Pierre Gerbais, but it is the Aubry twins, Pierre and Philippe, that have done the most with these arcane grapes. “If the varieties were planted in the first place our forebears must have had a reason!” they say. The distinctive and alluring flavors of their “Campanae Veteres Vites” (i.e. “the old vines of the countyside”) cuvee have been turning heads now for more than a decade. 2009 was a very warm vintage in Champagne and these conditions enabled the brothers to create their showiest and probably their best ever edition of “Campaneae Veteres Vites”. If you are curious to experience the exotic flavor spectrum of pre-phylloxera Champagne, this Aubry makes a scintillating time machine. The notes below are those of respected Champagne authority Peter Leim who gave it his highest (3 Star) rating.

3 STARS PETER LEIM CHAMGAGNEGUIDE.NET - "This is a blend of 25 percent Pinot Blanc and Pinot Gris (co-planted and fermented together), 20 percent Petit Meslier, 20 percent Pinot Noir, 15 percent Arbanne, 15 percent Chardonnay and five percent Meunier. Its glossy flavors of passion fruit, mango, guava and cassis are forward and voluptuous, although while this is luscious in feel, it's neither heavy nor overly sweet (especially not at 3 g/l of dosage). It's unusually multi-faceted, blending its fruit flavors with a complex herbalness and a detailed minerality-there's the sense that an immense array of components are coming together in perfect harmony, building towards a long and vibrant finish. As usual with this cuvée, the arcane varieties lend an element of originality and surprise, and it gives the impression that there's a lot more waiting to be discovered here in future tastings. Last tasted: 3/14."

Lemon peel, almonds, white flowers and spices are laced together in a Champagne endowed with a real sense of phenolic weight and verticality. Many of the current releases from Aubry are finely cut this year, but the Le Nombre d’Or Campanae Veteres Vites is a wine that is very much tied to the ground. The 2009 is 25% Pinot Blanc/Fromenteau, 20% Petit Meslier, 15% Arbanne, 15% Chardonnay, 5% Pinot Meunier and 20% Pinot Noir. Bottled February 2014. Dosage is 3 grams per liter."

from 1998, which was vinified without malolactic and aged in new oak for two years, while the second is a Villedommange pinot noir from 1999 that saw full malo, aged in secondhand oak for one year. The two were blended and bottled in 2000, in Aubry’s low-pressure “sablé” style of four atmospheres, and the subsequent cuvée was aged on its lees for 151 months before disgorgement in early 2013. A year later, it’s even more complex and complete than it was when it was first released, showing a resonant, expansive fragrance and a silky finesse. It expresses the nobility of both wood and lees aging, and its dense aromas are strikingly umami in tone, persisting with exceptional length and detail. This is a stunning wine, and while it’s not easy to find, it’s worth making a special search. Last tasted: 3/14."

2 1/2 STARS TERRY THEISE CATALOG-"THE MOST PROFOUND AND REMARKABLE CHAMPAGNE IN THIS OFFERING...
The wine is explosively salty, with mind-warping minerality. It’s a first for them, a new cuvée. It consists of 1998 Chard, aged in new wood for “two seasons,” no malo, and a “sablé,” i.e. 4 atmospheres rather than 6. There’s also 1999 PN that did malo, in 4-year wood for “one season.” It went en tirage in 2000 with “agrafé” (a cork, not a crown cap), and was disgorged in February 2013. Barely any dosage. Total production: 1000 bottles. I’d had a disappointing bottle of praised-to-the-skies (and criminally expensive) Cuvée Winston Churchill a couple nights earlier, and as soon as I sniffed this baby I felt the gravelly darkness the Pol Roger seemed to have been striving for. My image-vision was of an old, stoic man who’s spent his life working outside, and when he comes in for lunch the smells of earth and smoke follow him. The wine is adamantly long, with a keen forest-y finish. The empty glass smells like pigeon and summer truffle. This is the very opposite of frivolous. It speaks to a depth the Aubrys don’t let you see otherwise. It is extraordinary, meaningful wine."
