Whole bunches lightly crushed by foot in the press before the main pressing. Long, slow barrel fermentation at low temperatures with lots of lees. No stirring of the lees. Aging 19 months in barrels with 20% new oak. One racking just before the bottling. Bottling without fining or filtration. All the aging operations are carried out with reference to the lunar calendar.
